Has anyone tried out Fantasy Craft? Their point buy scalable monster creation seemed really interesting for adapting for other systems.

There are tons of brilliant ideas in Fantasy Craft. It's SUPER crunchy in play, lots to track! However, point based monster creation is super fun! You have to be careful to not squish the PCs.
